Spaghetti with Swordfish Roe

A real delicacy for fish lovers, 𝘀𝘄𝗼𝗿𝗱𝗳𝗶𝘀𝗵 𝗿𝗼𝗲 is one of the highlights of our September 𝗠𝗲𝗱𝗶𝘁𝗲𝗿𝗿𝗮𝗻𝗲𝗼 𝗕𝗼𝘅. Swordfish is a large fish, silvery in colour with shades of grey and can weigh up to several tonnes. Its meat is highly sought after and consumed, with a tasty and light flavour. When caught during the spawning season, the eggs are also renowned for their deliciousness. 𝗦𝘄𝗼𝗿𝗱𝗳𝗶𝘀𝗵 𝗿𝗼𝗲 is small and slightly pinkish in colour to the eye, and from a dietary point of view, 𝗶𝘁 𝗶𝘀 𝗮 𝗴𝗿𝗲𝗮𝘁 𝗻𝘂𝘁𝗿𝗶𝘁𝗶𝗼𝗻𝗮𝗹 𝗿𝗲𝘀𝗼𝘂𝗿𝗰𝗲 𝗮𝘀 𝘄𝗲𝗹𝗹 𝗮𝘀 𝗮 𝗱𝗲𝗹𝗶𝗰𝗶𝗼𝘂𝘀 𝗳𝗼𝗼𝗱. They are generally used to make botargo, as is the case with mullet and tuna roe.Swordfish roe is a true Mediterranean speciality, and the ones we have selected are handmade in Sicily, in the fishing village of Marzamemi according to the customs of the old tuna fishery.
