Exquisito pasta is produced with a high quality Sicilian durum wheat from organic farming.

We follow a controlled and certified supply chain project with a strong territorial imprint that guarantees the authenticity and local origin of the ground grains. The wheat is grown, harvested and ground on site. This gives rise to flour and semolina that smell of the land in which they were born.

The pasta is dried at a low temperature for more than 20 hours to keep its nutritional qualities intact, and it is bronze drawn. This process makes it porous and rough on the surface to capture sauces and condiments better, and prolong their flavor.

Most of the cereals we use come from the hills that surround the Iblei Mountains, a fertile land that has been awarded as UNESCO World Heritage Site. Here, many farmers cultivate with passion, according to traditional methods respectful of the environment. Some grains may come from other areas in Sicily, according to the period and the availability.

Lori is our pasta maker. With her attitude and kindness she controls every stage of our production. Her family history has its roots in the rural Sicily of the ’60s. From the first bakery and pasta factory in the village of Buscemi to the current artisanal pasta factory, it is a story that testifies constant commitment and quality.
She says: “Our ancient method of making pasta is based on the use of only three ingredients: durum or whole wheat semolina, coming from historic Sicilian mills, water from the Iblei Mountains and love for the traditions of our land”.
You will find her wandering around like a top, nothing escapes her control. Hers is still a small local family affair, with her husband and her sons helping her with passion and care.
