DESCRIPTION

A SlowFood Presidium, the Giarratana onion is a typical onion from Ragusa area, and has made the tiny Iblei municipality of Giarratana from which it takes its name famous.  It is an extraordinarily large onion, whose weight can vary from 500 grams to over two kilograms. Its cultivation is typical of the Hyblean plateau, furrowed by narrow valleys, more or less deep, set in the white calcareous rock from which the brown soils originate which, together with the hilly climate, determine the ideal environmental conditions for the cultivation of this onion cultivar.

The entire cultivation and transformation process is carried out by hand.

Traditionally, sowing is carried out from the end of October, during the full moon or waning moon, in seedbeds, and transplanting takes place in February-March when about 16-20 seedlings are planted per square metre. Harvesting begins at the end of July and continues throughout September. After harvesting, the bulbs are left to dry in the field for a week and are then stored in dry, ventilated places.

White in colour and with a sweetish taste, it is the main ingredient in many typical local recipes, very versatile in the kitchen and suitable for canning. With its white colour and sweetish flavour, not at all pungent, it is the protagonist of many typical recipes of the area and very versatile in cooking. It is also excellent raw, in salads, or simply dressed with extra virgin olive oil and salt.

Because of its size, which is very large, it is often used as a ‘spoon’ to hold the delicious baked beans from the Modica plateau. It is particularly suitable for preserves, produced by family-run businesses that grow and process the onion.

It all began in the distant 1980s, when a young boy of sixteen from the area, enterprising and determined to achieve his goals, began to develop a passion for growing an extraordinary vegetable: the Giarratana onion. After a few years of sacrifice and hard work, he used his savings to buy his first van, with which he began to sell and publicise the onion in neighbouring villages, thus laying the foundations of his business. With the passing of time, the Giarratana onion began to be more and more requested by the market, so in 2006 Salvatore decided to start processing the Giarratana onion, creating the first line of preserves and managing to pass on the same passion to his children. Soon, a few other local growers followed his example and started producing delicacies based on this unique type of onion.
