Nero d'Avola grape

We decided to pair Alessandro’s The Time Box, which we also love and use, with products made also with the Nero d’Avola grape.

Nero d’Avola is undoubtedly the quintessential Sicilian grape variety, with about 17,500 hectares of total cultivated area in Sicily. Its territory of origin is in the localities of Eloro, Pachino and Noto, in the province of Syracuse. The name “Calabrese” would suggest that its origins are in Calabria, but in fact it is an indigenous grape variety of Sicily. it is certainly the most famous Sicilian red grape variety, and one of the most widespread throughout the island thanks to its flexible character that allows it to adapt to the different conditions of the Mediterranean climate.
Today, Nero d’Avola is grown throughout Sicily, with predominance in the provinces of Agrigento, Caltanissetta and Siracusa. A fair amount of Nero d’Avola is also cultivated today in the Ragusa area, where it is used in blends with Frappato to produce Cerasuolo di Vittoria DOCG. l Nero d’Avola is a vigorous and generally very productive vine: this is why it is very important to control yields per hectare to produce quality wines. Lu Cori from Cantine Barbera is an organically produced wine. In the mouth it is fragrant, soft and velvety, with delicate tannins, perfectly integrated in a juicy and persistent finish. Ripe red fruits, blackberry and raspberry above all, characterize its bouquet, made intriguing by notes of brine and a slight spiciness. Agile and streamlined and with that hint of acidity that makes it expressive, sensual and very Nimble and streamlined and with that hint of acidity that makes it expressive, sensual and very intriguing it goes well with semi-mature cheeses, cured meats and even with fish.

Sip a glass of Lu Cori and pair it with the cheese and the gelée and at the end with the chocolate.

Sheep cheese aged with Nero d’Avola
Pasteurized whole sheep’s milk, Nero d’Avola wine, selected milk enzymes, rennet, sea salt.

Gelée di Vino Nero d’Avola con Miele Millefiori e Cannella
Nero d’Avola I.G.T. Sicilia wine (70%), sugar, lemon juice, wildflower honey (2%), cinnamon (0.06%). Gelling agent: pectin.

Store Cioccolata di Modica in a cool, dry place: chocolate fears heat and humidity. Ideally, it should be stored in a pantry away from light and heat sources.

Store the wine at a temperature of 14°C to be enjoyed at their best.

Store the cheese in the fridge at a temperature of 4°C.
