Pesto Rucola selvatica – 180g

In this intensely flavoured Pesto di rucola selvatica the slightly spicy flavour of wild rocket meets the sweetness of the Avola almonds and the distinctive taste of sun-dried tomatoes. This is an excellent  pesto sauce for delicious pasta as well as a dip for an antipasto.

Arugula is considered a medicinal or officinal herb for its health-promoting and aphrodisiac properties known since ancient times. In contrast to cultivated rocket, wild rocket has longer, thinner stems, leaves with serrated margins, yellow flowers and a decidedly more intense and spicy flavour. The sprouts and leaves of this beneficial plant harvested from late spring until late autumn are excellent both raw and cooked as they are considered a source of minerals and vitamins.

Sicily is particularly suited to the cultivation and production of high quality almonds, due to its climate, soil characteristics and environment. Sicily is the region in Italy that benefits most from almond biodiversity and Sicilian almonds are true delicacies in terms of both taste and excellent nutritional properties. Unlike what frequently happens in intensive foreign cultivations, to guarantee a quality almond in Sicily, irrigation is only on emergency conditions, the traditional harvesting is done by hand and drying, which can last up to two weeks, takes place in the sun and not in an oven or in high-temperature dryers that would compromise the product’s properties if temperatures exceed 42°C.

Perfect as a condiment for all our types of pasta, you can also use it to prepare canapés or to stuff home-made meat rolls.
