Pesto Trapanese is a very old and strictly homemade dish. Presumably of Genovese origin, it is said that it was Genovese ships from the East that stopped at the port of Trapani that brought the tradition of the Ligurian garlic and walnut-based agliata, a sauce made with garlic, which was elaborated by the Trapanese sailors with the products of their land, tomatoes and almonds.

The pasta traditionally used with Pesto Trapanese is the busiate, a fresh pasta, a kind of fusillo twisted with a branch of buso, which is the stem of the ampelodesmo plant, or a dried reed thread. Thanks to their shape, busiate are very versatile: their ‘curls’ go well with all sauces, whether vegetarian, fish or meat. Try our artisanal busiate, made only with Sicilian grains, bronze drown and slow dried at low temperature.

Our Pesto Trapanese has a perfect consistency for seasoning pasta, but you can always add a tablespoon of hot water if necessary to mix it well with the pasta.
