Paté di carciofi e mandorle

The particular bitter sweet taste of artichoke meets the sweetness of coarsely chopped almonds giving life to our Paté di carciofi e mandorle, a delicious condiment which is suitable for many uses: on toasted bread croutons, with vegetables, as a sauce for pasta, to enrich your risotto or for a summer lasagna, and to accompany fish and meat.






You know that

Quality ingredients for this delicious paté. The fresh artichokes are cleaned one by one by hand to eliminate all the hard external leaves, the thorny top, the beard if present, the external part of the stem which is bitter. Only the heart must remain, which is cut into slices and then placed in water and lemon juice to prevent them from darkening. The paté is then prepared with the best coarsely chopped almonds, topping up some with extra virgin olive oil and sunflower oil to add more flavour. 


We usually use Sicilian almonds since Sicily, together with Puglia, is an area particularly suited to the cultivation and production of high quality almonds, thanks to its climate, soil characteristics and environment. There are many varieties of almonds growing in Sicily.
Pizzuta, Tuono, Genco, Cavalera, Ferragnes, Vinciatutti, Romana, Fascionello, Giardinello, Don Pitrino, Nivera are the most cultivated ones, then there is Cuva Femminella, a variety recovered rather recently. Sicily is the region in Italy that benefits most from almond biodiversity, and Sicilian almonds are true delicacies both in terms of taste and excellent nutritional properties.

We love it on toasted bread croutons or with vegetables for a quick and tasty aperitif. But if you like cooking, you can try it as a sauce for pasta, to enrich your risotto, and also for a summer lasagna, or to accompany fish and meat.

Store in a cool, dry place at a temperature of around 10°. Once opened, cover with oil, keep in the fridge and consume within 4/5 days.
