We are particularly fond of Nero Mare, our exquisite sauce made with tomato purée, squid ink and pieces of cuttlefish, a perfect condiment for our pasta – linguine or spaghetti – and for rice.
A real treat for those who love the flavours of the sea!






You know that

Squid ink is the dark liquid secreted for defensive purposes by these molluscs belonging to the cephalopod family . It is released from a special sac (located between the gills) and dispersed with the help of a jet of water emitted from the siphon.
The dark colour is due to its main constituent, melanin. It may also contain, among other things, small amounts of amino acids, roteins, lipids and minerals, especially iron.
In the past it was used as an ink to write and paint, today it is mostly used in cooking.


Freshly extracted, it is considered a product of great gastronomic value.

Today it is widely used in cooking as a food colouring and flavouring, especially in Mediterranean countries and Japan.
In the Italian cuisine, and particularly in the Sicilian tradition, it is mainly used as a condiment for pasta and rice dishes.

It seems to offer remarkable radio-protective qualities, and squid ink protects the production of white blood cells, promotes the production of new blood cells, is antioxidant, anti-inflammatory and also protects the intestinal walls.
Cuttlefish ink also demonstrates remarkable antibacterial activity against various antibiotic-resistant pathogens.
It is a low-calorie ingredient that is particularly suitable for cooking, as it has a strong, assertive taste that provides flavour to any dish even when used in small quantities.

Our Nero mare sauce has a perfect consistency. Heat it over a low heat before seasoning pasta and rice, if necessary add a tablespoon of water.
