You know that

We are very proud to collaborate with this family cheese factory located in Marsala, western Sicily. They produce the Sheep cheese with black pepper crust in your Formaggi Gourmet box. With great passion and dedication, Federica and her family have for three generations been carrying on a project to enhance milk by transforming it into products of excellence. Fresh, genuine sheep’s milk from local sheep farms is processed within hours of milking to maintain its natural nutritional properties.
The family’s history became intertwined with the art of cheese-making in 1980, when the Genna family became affineurs and maturers of Sicilian pecorino. Over time, the story evolves and the Genna family builds the first real cheese factory in the city of Marsala, becoming producers of fresh and mature pecorino cheese.
In 2018, the new dairy factory was born: modern, innovative, young, aiming to research and experiment with dairy products with refined, rare and often explosive flavours. They produce flavoured, blue-veined, inebriated and lactose-free cheeses, but also continue to produce the pecorino cheeses that have made the history of this company.
In May 2020, it was included in the register of Italian Excellence (Anti-Counterfeiting ID no. 13006).

The coscia is a variety of pear that is cultivated in Sicily, in the Catanese area up to the province of Agrigento, typical of the summer period . It was so called by the ancients because its small round shape recalled the beauty of female curves. Coscia means tigh. It is harvested early starting in July and can be found until early fall. It is quite small in size, weighing up to 200g. Its skin is thin, usually green at harvest and turns yellow once it has completed the ripening process. The part that is most exposed to the sun takes on a pinkish hue with shades up to deep red. Its flesh is extremely juicy, white and moderately grainy. The coscia is one of the most prized pears and is usually grown completely naturally, avoiding pesticides or commercial fertilizers. It contains a lot of potassium and vitamin C, has antioxidant properties, fights free radicals, and is rich in fructose and fiber, which improve digestion and intestinal functions.
Its flavor, delicate and sweet, pairs perfectly with aged cheeses, such as pecorino and tuma.

Ingredients: mandarins, brown sugar, lemon juice, turmeric (0.1%). Fruit used: 85 g per 100 g.

Nero d’Avola I.G.T. Sicilia wine (70%), sugar, lemon juice, wildflower honey (2%), cinnamon (0.06%). Gelling agent: pectin.

Store the cheese in the fridge at a temperature of 4°C and once opened wrap in cling film.
Once opened, store the preserved in the fridge, too.
