Citrus fruits are the fruits of winter. They are low in calories and almost fat-free. The carbohydrates, present in the form of fructose and dextrose, provide the right amount of energy. They are rich in flavonoids (mainly present in the white membrane), which have anti-inflammatory and antioxidant properties. They are an excellent source of minerals, such as calcium, iron, magnesium and potassium, and vitamin C.

Oranges, lemons, mandarins, limes, grapefruits, pomelo cedar, kumquat (better known as Chinese mandarin) bergamot, chinotto are among the best known citrus fruits. Ā Less well known are the citrus fruits from the East: amanatsu, dokepon, oikan, hassaku, kabosu, miyagawa, combavalo and yuzu. From other parts of the world come the ugli from Jamaica, the small lima fruit from Tahiti, the Keffir lime from Thailand and the trifoliate orange from Australia. The choice of species and varieties is very wide, with important differences even in the flavour of the fruit within the same species: just think of bitter oranges, which are only used for jams because the flavour and texture of the fruit do not allow them to be eaten fresh.

They are mainly eaten fresh, but are also used in cooked recipes such as for making preserves and jam. Our best citrus fruits, selected in the field, come from small producers. Once they have reached perfect ripeness, they are sorted, prepared and peeled strictly by hand, to preserve and preserve the consistency and integrity of the fruit and its precious peel. The result is intense and fragrant jams that preserve and release all the flavour of the most genuine Sicilian tradition.
